Spa Dining provides quality education in practical lifestyle skills for Diabetics, pre-Diabetics
and anyone wishing to pursue a long-term, sustainable dietary plan.   We teach efficient
cooking techniques and healthy ingredient substitution, demonstrated in each class t
hrough a
number of
culinary-savvy recipes.  Many of these are developed from the personal recipes of
Cecilia Lam, founder and president.   

Cecilia has dedicated two decades of her life toward creating a better dining experience for
persons with dietary restrictions for medical or personal health reasons.  Having helped many
people through successful weight control and dietary compliance programs, she now brings
her considerable expertise, training and experience to you through Spa Dining's services.

Cecilia combines a passion for cooking and fine dining with more than 20 years of hands-on
professional experience in the food and health sciences industry.  As a type 2 diabetic herself,
she has experienced first-hand the lifestyle changes necessary for long-term management of
her condition, at the same time striving to minimize their impact on the quality of everyday life.

Cecilia holds an degree in Food Science and Nutrition from the University of Strathclyde
in Glasgow, Scotland, as well as a Polytechnic Diploma in Food Technology.   Her career
began with Nestlé Foods, where she worked in development and QA of manufactured
foods such as tomato ketchup, milk formula and dairy products.  As a food microbiologist,
she helped develop the laminated foil pouch packaging widely used in convenience foods
today.   
For six years in the 1990's, Cecilia started and grew a successful corporate catering
business serving s
ome of Silicon Valley's most prominent companies.

An accomplished cook with a talent for innovation, Cecilia has supplemented her technical
background with formal training in a number of European and Asian culinary disciplines.  She
is widely traveled, has lived on 3 continents, and indulges a passion for fine dining across
diverse cultures.   

Hardly a day goes by when Cecilia isn't searching for new recipe ideas.   As she strives to
deliver sustainable, balanced nutrition to her cl
ients, she sees no reason why they can't enjoy
an attractive and satisfying meal every time.  Her simple motto is:
